Oreo Cupcakes

Ingredients:

OREO CUPCAKES

  • 1 box of white cake mix, plus all of the ingredients listed on the back
  • 1 package of Oreos

OREO BUTTERCREAM

  • 1 stick butter, room temperature
  • 1/2 cup vegetable shortening
  • 3 cups powdered sugar
  • 1/2 tsp vanilla
  • 6 tbsp Oreo crumbs

Directions:

OREO CUPCAKES

  1. Preheat the oven according to the directions on the cake mix box. Next, prepare the cake mix as directed.
  2. Place cupcake liners in the pan.
  3. Add one oreo to each cup.
  4. Pour the batter in the cups, filling each slightly over 1/2 full.
  5. Bake as directed on the cake mix box, based off the directions for cupcakes.

  1. In a mixing bowl, combine the room temperature butter and shortening, beat using an electric mixer for 2 minutes, until light and fluffy.
  2. Begin to add in the powdered sugar, about 1 cup at a time. Slowly beat the mixture until the powered sugar is incorporated. Continue this process until you’ve added all of the powdered sugar.
  3. Add in the vanilla and oreo crumbs, and beat until just combined.

Cream Cheese Dip

  • 1 (7 ounce) jar marshmallow creme
  • 3/4 cup confectioners’ sugar

Instructions: In a large bowl, blend cream cheese, marshmallow creme, and sugar with electric mixer until smooth. Serve with fruit (optional).

Cranberry Salsa

Cranberry Salsa

12 ounces fresh cranberries
1/3 – 1/2 purple onion
1 small seeded jalapeno or less, depending on how hot you like your salsa
1/2 bunch cilantro
1 cup sugar
1 teaspoon cumin

Pulse cranberries, onion, jalapeno and cilantro in foor processor (or blender) until all are coarsely copped. Mix in sugar cumin. Refrigerate.

Serving Ideas: Salsa may be pored over a block of cream chees and served with crackers or toasted and buttered slices of baguette bread. It can also be served plain with corn chips.

Bacon cheeseballs

2Tbs minced green onion
12 oz soft cream cheese
1/4 cup mayo
5 strips of crisp bacon
1/2 tsp dill weed
1/2 tsp pepper
Chopped pecans

Mix all ingredients together(except pecans). Chill, 5-10 min them roll into a ball and roll over chopped pecans.
