Oreo Cupcakes

Ingredients:

OREO CUPCAKES

  • 1 box of white cake mix, plus all of the ingredients listed on the back
  • 1 package of Oreos

OREO BUTTERCREAM

  • 1 stick butter, room temperature
  • 1/2 cup vegetable shortening
  • 3 cups powdered sugar
  • 1/2 tsp vanilla
  • 6 tbsp Oreo crumbs

Directions:

OREO CUPCAKES

  1. Preheat the oven according to the directions on the cake mix box. Next, prepare the cake mix as directed.
  2. Place cupcake liners in the pan.
  3. Add one oreo to each cup.
  4. Pour the batter in the cups, filling each slightly over 1/2 full.
  5. Bake as directed on the cake mix box, based off the directions for cupcakes.

OREO BUTTERCREAM

  1. In a mixing bowl, combine the room temperature butter and shortening, beat using an electric mixer for 2 minutes, until light and fluffy.
  2. Begin to add in the powdered sugar, about 1 cup at a time. Slowly beat the mixture until the powered sugar is incorporated. Continue this process until you’ve added all of the powdered sugar.
  3. Add in the vanilla and oreo crumbs, and beat until just combined.
